Tofu Stir-fry

Serves 4


  1. Heat oil in large skillet or wok. Add broccoli and cauliflower.
  2. Cook at medium–high heat, constantly turning and moving vegetables in pan.
  3. When broccoli and cauliflower are tender enough to be easily speared with a fork, add snow pea pods and stir for one minute.
  4. Sprinkle evenly with spices and stir-fry for 30 seconds.
  5. Add mushrooms and continue to stir-fry another 2 -3 minutes.
  6. Add water chestnuts and slowly add tofu.
  7. Gently stir-fry until all tofu is coated with oil and spices. Turn down heat to medium low, cover with lid, and continue to heat until tofu is thoroughly heated. Stir occasionally for 2-5 minutes. Then remove lid and sprinkle with onions and almonds.
  8. Stir–fry lightly and serve.
